Chinese Fried Rice

In this recipe, you’ll see how to make a delicious Chinese Fried Rice for 30 pax, using Lainox and Robot Coupe machinery.

Ingredients

1,500 gm RICE

150 gm VESAWIT COOKING OIL

1.9 kg WATER

12 gm CHICKEN STOCK POWDER

6 nos EGG (GRADE A)

10 gm FINE PURE SALT

40 gm FISH SAUCE

80 gm GARLIC

45 gm LIGHT SOY SAUCE

600 gm MIXED VEGETABLES

1,000 gm SAUSAGE

300 gm VESAWIT COOKING OIL

8 gm WHITE PEPPER

Directions

Step 1: Wash Rice 3 Times by Water.

Step 2: Pour Washed Rice to 1/1 GN Pan. Add In Water.

Step 3: Pre-Heat Oven With Below Settings:

Mode: Steam Mode

Temperature: 100C

Time: 30 Minutes

Step 4: Prepare The Condiment. Cut Sausage into Small Dice

Step 5: User Robot Cook to Heat Oil. Break The Eggs And Slowly Pour It Into Robot Cook Through The Hole.

Temperature: 140C

Speed: 600rpm

Time: 4 Minutes

Step 6: Add Garlic in Robot Cook

Temperature: 140C

Speed: 600rpm

Time: 2 Minutes

At The Beginning, Press Turbo Two Times.

Step 7: Add The Dice Sausage In Robot Cook.

Temperature: 140C

Speed: -260rpm

Time: 3 Minutes

Step 8: Add Rice Into 1/1 GN Pan And Use Hand Glove To Mix The Cooked Ingredients. Pour In Rest Of The Ingredients Except Sesame Oil. Mix Well.

Step 9: Pre-Heat The Oven To 100°C On Steam Mode And Cook For 8 Minutes. Then, Set "Fast Dry" In Convection Mode, Cook for 3 Minutes at Temperature 180°C.

Step 10: After The Fried Rice Is Done, Remove From Combi Oven, Add Sesame Oil And Mix Well. Rice Can Be Served With Slice Spring Onion And Fried Onion.
