Onde Onde Butter Cake
Ramadan Mubarak! Let's bake Onde Onde Butter Cake to share the joy, gratitude, and sweetness!
It is a small Pandan Butter Cake filled and decorated with freshly grated coconut & Gula Melaka syrup.
Start to bake and share them with your loved ones!
PREPARATION
Pandan Butter Cake:
INGREDIENTS | AMOUNT |

Egg | 190 g |
Sugar | 143 g |
Dextrose | 20 g |
Emulsifier | 8 g |
Butter | 100 g |
Margarine | 100 g |
Salt | 2 g |
Pandan paste | 4 g |
High ratio flour | 175 g |
Baking powder | 5 g |
Coconut cream powder | 20 g |
1. Pour egg, sugar, dextrose and emulsifier into mixing bowl.
2. Follow speed as below:
- Attachment: Whisk
- Step 1: High speed, 2 mins
- Step 2: Medium speed, 2 mins
3. Transfer the egg mixture into other bowl.
4. Place in butter, margarine, salt, pandan paste, high ratio flour, baking powder and coconut cream powder into the mixing bowl.
5. Change the attachment tool to paddle attachment.
6. By using slow speed mix for 30 seconds until all dry ingredients mix into butter.
7. Change the speed to high speed for 2 mins.
8. Change to medium speed for another 2 mins.
9. Add in 1/3 part of egg mixture into the butter batter, mix until combined well.
10. Scrap down the side of the bowl to make sure all batter mix evenly.
11. Add in another 1/3 part of egg mixture into the batter, continue to mix with medium speed for 1 min.
12. Add the rest of the egg mixture into the batter and mix well with slow speed.
13. Transfer into the mould.
14. Bake at 160°C for 20 mins.
Gula Melaka Coconut Filling:
INGREDIENTS | AMOUNT |
---|---|
Gula Melaka | 80 g |
Water | 45 g |
Fresh Grated Coconut | 140 g |
Pandan Leaf | 1 pc |
1. Chop fine on Gula Melaka.
2. Place chopped Gula Melaka into a sauce pan and add in the water.
3. Bring to boil.
4. Add in pandan leaf and fresh grated coconut.
5. Sautee for 2 mins (make sure the fresh grated coconut are fully coated with Gula Melaka).
6. Set aside to let it cool down.
Gula Melaka Syrup (optional):
INGREDIENTS | AMOUNT |
---|---|
Gula Melaka | 100 g |
Water | 150 g |
1. Chop fine on Gula Melaka.
2. Place into a sauce pan and add in the water.
3. Bring to boil.
4. After boiled, set aside to let it cool down completely.
5. Pump into squeeze pumps to decorate the butter cake.
ASSEMBLY
(Pandan butter cake + Gula melaka coconut filling + Gula melaka syrup)
1. Unmold the pandan butter cake.
2. Pop a hole at the bottom part of each cake.
3. Stuff in Gula Melaka coconut filling.
4. Decor the cake with some freshly grated coconut and Gula Melaka syrup pump.
